This is the biggest travesty of BDSP. Hoenn may've introduced contests but Sinnoh continued to carry the torch for them. Dawn's contest journey was far more memorable than May's because of all the ups and downs she went through.
The games themselves also added MORE to the gameplay, from the accessory dress-up, to the dancing, and finally to the traditional Contest battle format. Just like OP more neatly and concisely put it, nearly all of it just... gone.
I already know what some of the defenses for this are gonna be, too.

Yes. I care. I loved this feature and it was exclusive to DPPt and Pokémon itself.

So then why did they gut this part of the game entirely?

They gutted the dex and made the graphics chibi, on a console that runs better than the DS, which managed SM and USUM just fine.
Let's Go uses menus to let you dolly up your starter in a similar manner. It takes time to add features like this, sure, but I would've waited for them.

No. Many other dress-up games exist for dressing up human characters. This is about Pokémon.
