In vanilla SuMo the story is smaller scale. Lusamine is an overbearing cunt who refuses to tolerate anything she doesn't deem beautiful. She things the Ultra Beast are the most beautiful things ever and basically told her kids to fuck off when they wouldn't support her. Then threw a tantrum when Lillie called her a cunt that refuses to be a mother under any circumstances and then you battle her while she's high on jellyfish piss. She loses, goes through jellyfish piss withdrawal, and Lillie takes her hoping to help her heal. Both physically and as a family.
The Ultra games are way more bombastic by comparison. It's less about family and more about saving the world. Same premise Lusamine is an overbearing cunt obsessed with Ultra Beasts. But rather because they're beautiful it's because a couple of aliens warned her of Necrozma. An interdimensional predator who feeds on light. Like literal light. It already devoured ALL THE NATURAL LIGHT in their world and it's coming for Alola. And Lusamine just assumed she could deal with it herself. Of course it didn't work, Necrozma kidnaps Solgaleo/ Lunala, and was gathering strength to assault Alola. You stop it and you're a hero but you still have to prove yourself to the Elite 4 for some reason.
Other than that it's small changes. In the original Hau is a shitter who just wants to have fun and doesn't want to try and live up to his grandfather's legacy. While in Ultra he realizes he's disrespecting his pokemon by not giving them wins for their hard work and starts grinding matches like a motherfucker until he challenges you as Champion.
