Braixen is my favorite, it is a good combo of cute and capable, which are my favorite type of Pokemon. Delphox losses the cuteness, but dedicates itself more to the witch motif and as a fan of witches and spookiness that is neat. I don't take issue with it's ears, and I find that it is one of the few Pokemon who can pull off the "it looks like it's wearing clothes, but not really" look. The Robe is both present enough to not be ambiguous, but also not in your face, it looks natural enough.
What I really like is that it is fully a witch and looks like the kind of creature who would be in the middle of a forest practicing arcane arts, we've had witch Pokemon before like Murkrow and Mismagius, but neither of those are creatures I would find over a cauldron or looking over a spell-book.
I'm not most eloquent, but that is the appeal to me and I hope it makes sense.
