Long story short: they used their Psychic powers to basically tulpa these Pokemon to life.... Even during contemporary times Pokemon and their forms continued to be affected(effected?) by the noosphere of human culture and thought psychically influencing the evolution of more culturally based pokemon.
It's why so many of the "literally objects" are literally objects- animated by spirits, thoughts, etc.. perpetuated by memes (no meme intended).
