Ideally, the writers would directly adapt the old scripts. They'd probably remove some of the quirks like references to real-world animals and tone down the violence (like Misty slapping Ash, Team Rocket beating each other up, guns being drawn, etc.). The fewer changes they make, the better.
Would be interesting to see which episodes they'd skip and where they'd stop. Obviously Porygon wouldn't be adapted, the beach episode is pretty inappropriate by today's standards, and I doubt they'd want to have AJ whipping his Pokemon. If it's bridging the gap between Horizons and Gen 10, I could see them going from I Choose You to Pikachu's Goodbye with several filler episodes skipped.
