Fill up the Pokedex by catching everything you can, and for the ones you can't, grab a Link Cable and trade with your friends. The Kanto saga in the OS even pushed this aspect to an extent, with Professor Oak mentioning to Ash on more than one occasion how many Pokemon Gary had caught, which would prompt Ash to want to catch up to Gary.
But yes, I would've liked to see Goh have a rotating team of Pokemon to work with on Project Mew missions, and have him work to become a stronger, more well-rounded trainer by challenging the occasional gym. Would've been a good opportunity to bring back some past gym leaders for an episode or two, too, and played into Journeys being a series that had the entire Pokemon world open to it, rather than just a single region, as was the previous series formula. There were lots of ideas and opportunities that were left on the table, sadly.
