As another example of a series that has been shockingly pumping out a lot of games on the Switch, Xenoblade has been doing it a lot and are working off a modified version of the Wii U title to my understanding. However, aside from Let's Go and SS definitely sharing an engine and LA and SV maybe sharing one possibly with zero real evidence, they've been heavily re-working how the games even operate a lot lately. I think this is an Ohmori problem more than anything, Masuda was less afraid to iterate less and I understand Gen 6 was just so ass that they probably wanted to get out from under it as much as possible for SM, but given how SM's development was a nightmare and SS being based off Let's Go didn't help much I don't even know if there's a good solution aside from sitting down and making a solid transferable engine much like the Kirby games from Return to Dreamland to Star Allies did (an engine they still got even more out of between Kirby Fighters 2 and the remake of the first game listed). At least they had the sense to have Creatures Inc. make base textures and quad models in the first place, even when they have to change lighting engines constantly (or in the case of the 3DS titles, had to fuck around with the base textures directly).
