As new areas open up, new Pokémon become available and you can traverse deeper into the island to catch all the Pokémon. Pokémon are plentiful in each area and are organised by their catch rate so it becomes more of a challenge to catch Pokémon further into the game.
Pic related is a basic map of the island. The Welcome/Administration area would be where the assistant works from and the island's major buildings like the Power Plant that would inevitably need restarting once you got enough guests, post office to receive gifts later in the game, etc. The Living Areas would be where you and your residents live as well as where the hotels for the visitors would be built. The Entertainment District is where you'd find the Game Corner, TV Station and newspaper, funfair etc. The Food Plaza, of course, speaks for itself, it's where you'd find the food court but also berry and juice shops. The Shopping Complex, again, is totally obvious, Poké Mart, Departments Store (later in the game), specialised shops, etc. The Battle Zone would feature the Gym, League, Dojo, various Stadiums and the like. The Pokémon Areas would be things like Daycare, Zoo and Safari Zone. The Relaxation Areas would include parks, Pokémon Fan Clubs, Cable Club (for in-game trades to get rare Pokémon), Fossil Lab, etc.
The other areas are Pokémon habitats, which are unlocked at milestones but certain areas would need items to reach. It would also be possible to traverse the island by train and cab once you unlocked more areas and by teleportation/use of Fly to the catching grounds.
