Good morning friends, I just hatched a 6IV Eevee that I want to evolve into an Espeon. My only concern is:

Does it matter at what time I evolve it if I want to get the best stats?

No, it doesn't.

Look at these equations is pic related. When you evolve something, the ONLY thing you're changing in the equation is the base stat (called "base"). The level is completely separate and not affected by the base, nor is the base affected by the level

Actual stat value is based on: Base Stats, IVs, EVs, and Current Level (and Nature)

So a Crobat at level 22 will have lower stats than a Crobat at level 50 (assuming same nature/iv/ev) but that level 22 Crobat, once leveled up to 50, will have identical stats to the one evolved at level 50.
