Water Capybara if you want to go for a mammal. Maybe a Fire/Ghost horse if you want a mula-sem-cabeça (and appel to that zodiac thing) or maybe some kind of dog or bat.
As for grass, you could go for a whole lot of things. Monkeys, sloths, lizards, bulls, deers, anything you want, really. With such a ridiculously large fauna, the options are enormous.

As a br myself, I'd actually rather see a region based on the British Islands, with a welsh and irish mythology as basis, or a china-based region than a brazilian one. I mean, if they ever make a region based on Brazil, there's no way they can cover the countries varied climates and divergent cultures. Besides, they'd very likely make that uncivilized hellhole of Rio the center of the region in detriment of more interesting regions like the northwest and São Paulo.

The main problem was when Brazil turned into a republic:

It's not like the empire was doing any good as well. If you read the letters from the military and the economic reports from back then you can see that the empire was having a lot of problems trying to maintain unity on the nation. Sure, a republic built up by oligarchies is not a good start but the empire isn't all that people think it is. The best scenario would've arguably been British colonization or an independence process based on the French revolution like they had in the in the USA. With, you know, a war and not some handshaking.
