So was Ultra Necrozma designed (or at least partially designed) alongside "base form" Necrozma and the parts with Ultra Necrozma were scrubbed out of the publicly released reference sheet?

Change of plans, most likely. Ariga designed Ultra but not the base form; he probably realized the chest area was too bare since you'd be seeing it from the front during the story, so he moved the tailpiece there.

I never realized the rock spike on Midnight and Dusk's head is present on Midday as a back spike. And the 4 spikes on Midday and Dusk's neck are Midnight's rib spikes. I've been wondering why they all weigh the same even though it looked like they all had different amounts of rocks.
