Considering previous starters, I believe I can guess their evolutions:
+ Coalt could first evolve into an "Unicorn Pony" similar to Ponyta but with a horn. Its final evolution could look like rideable "Alicorn" Pokemon; that means, like a Rapidash with wings, becoming Fire/Flying.
+ Urvine could evolve into something similar to previous Bear Pokemon, like Ursaring or Beartic; and possibly gaining the Fighting type.
+ About the Water type, I suppose it will be Water/Rock Type, but no idea of evolutions.
