It is also helpful if you want to get prepared during a dungeon before your next quest. Of course, you don't always need to grind, but it can always come in handy depending on your situation.
I get it is boring, repetitive and shouldn't be required to fully experience the game, but what would make it so different to one shot 10 wild Rattatas than catching them? They would give you pretty much the same experience and battles, but catching can take longer and you have limited resources to get Pokeballs unlike PP which are easily regained after visiting a Pokemon Center.
Besides, this game lacks of other minigames or side quests. Even with Pokemon GO, if you want to make your Pokemon stronger, you have to catch a lot of them in Pokemon GO before transfer, which makes the quest even more tedious than just one-shotting everything to gain experience. If LGPE offered more things to do than just catching and battling (like Contests, Secret Bases, Mantine Surf, Wi Fi Plaza, Underground, Musicals, Poke Finder), then it wouldn't be so repetitive and tedious.
