So, if they ever put customizable age/body size to our main character, I guess some pokémon like Persian or Starmie would stop being rideable for larger trainers. That'd be an advantage for playing as a kid and big trainers should get something extra to compensate

Next game should allow more pokémon to be rideable by introducing items.
Like you can't ride a Magmortar because you'd get burns, unless you buy a proper saddle.
Flying mons with a proper saddle can soar.
Stuff like that

I think it’s based on availability. Birds are available early and would allow crossing to cinnabar the moment you got the evolution up there. Aerodactyl requires fossil lab so you’ll have overcome those challenges by then.

Given how USM had Totem Pokemon be bigger then average mons and now LGPE has different sized mons everywhere, is Gen 8 going to incorperate all the mons potentially having individual sizes for cosmetic purposes? It'd be neat to have that option for all mons.

That would be cool, and it would be really easy to scale the models up or down, but knowing GF, I'm certain they won't do it. Especially considering how the different-sized Pokemon in LGPE don't actually have different-sized models in battles and the overworld.
