I haven't played a Pokemon game since Gen 6 and I'm itching to get back into it.

Should I play Sun/Moon or just skip to Ultra Sun/Ultra Moon?

Skip to Ultra Sun, then watch a playthrough of regular Sun afterwards because the story is better. Gameplay-wise the Ultras are better in almost every way.
