How come an N64 game from 20 years ago has better animations than every mainline game ever released? How could they let the entire series peak there?

Gamefreak are a bunch of hacks, that's why.
The other 3D games that played like mainline weren't even made by Gamefreak. The Stadium games were made by Nintendo EAD and the Colosseum Games were made by Genius Sonority.

Simple: 150 Pokémon are easier to program unique animations for than 800 or so. The LGPE example is legit lazy, though, as they couldn't even bother giving poor Pikachu any of its actual attacking animations.

I never said LGPE gets a pass. I still think it's lazy since it also has the original 151 Pokemon (plus Meltan and Melmetal) and yet didn't update the move animations.

Given that GF doesn't have much experience with home consoles compared to companies like Square Enix and Monolith Soft, I'm not expecting the graphics to be on par with BOTW and XC2. They could just get help from the latter though.

Because they weren't reusing animation and cg assets everygame. Which I'm fine with but they really could benefit from future proofing animations. It's a lot of work initially but it's improving things in the long run.
