A big problem with Gen 7 is the cutscenes, you'll find a lot of people on here whine about it, myself included to an extent, but on a first playthrough, it's fine, it just has no replay value.
USUM has a whole lot more unnecessary fluff in the regard. Detours into Pikachu Park or whatever that was, that serves no real purpose and is just there to fill time.
The only reason to get USUM is if you want to take photos with your Pokemon, which is a neat feature, or if you're really dying to fill the Pokedex, other then that, get SM, I think it has a better story too, personally.
Regarding gameplay, it's Pokemon, nothing really out of the ordinary, but I believe it is one of the best Pokemon games in terms of aesthetic. It hits the nail on the head with it's Hawaiian theme. The new Pokemon are all pretty great, it has good lore, good characters, a great game to dive back in.
