Speaking of their anatomy actually, I've always assumed the Amorphous Egg Group is intended to communicate that they have very minimal skeletal structures. Almost all Amorphous Egg Group Pokemon are characterized by bodies that have no meaningful skeletal structure. The only other exception besides Gardevoir would be the Eelektross family, and being an eel it has a minimal skeletal structure anyway.
