This isn't really the same situation, there has never been a pokemon game with every single species available in the wild. People aren't exposed to a shit ton of pokemon unless they transfer them from previous gens so the only thing that really matters when it comes to diminishing marginal utility is really the regional dex which is what most users experience. That's just my opinion.

Let's say you wanted to do a fun run of SwSh where you used a Sinnoh Starter instead of the Galar ones, well unless they're in the dex you can't do that.
Limiting player options ( especially when they were there in prior games ) is never a good thing and shouldn't be something we encourage game devs to do.

Okay. So instead I would just do a run with Hoennmons if they are in the game instead as it's close enough. There's too many other choices for me to get overly autistic over a specific 3.
