For Zelda, I think the first two games are absolute shit. A Link to The Past is when it hit that 'it can't get any better than this point', at least for the 2D games.
First Castlevania was shit too, but Super Castlevania IV? Now that's some good shit.
Ys Oath in Felghana > the old bump system the games used to have.
Resident Evil REmake or the gamecube is leagues better than any other game in the series.
The thing all of those have in common is they retain the core gameplay style, they're just much more fleshed out and superior to the old versions.
Same with Pokemon. Gen 1 is too barebone to be enjoyable these days, same can be said for gen 2.
Things I don't want with Pokemon would be a complete change to the gameplay loop or the turn based combat. That's why I've never played nor ever will play Let's Go. It's a shitty spinoff in my eyes. I want Pokemon in its purest form and that's what we've been getting recently.
