It would be a pretty messy defeat. Her form would gradually break down as parts of the cream go bad and scattered pieces become too exhausted to return.
Logias aren't like that. Their elemental bodies are lifeless substances fueled by some seemingly endless energy source.
By the way, haki wouldn't really work on Alcremie. It seems to interfere with devil fruit defenses, allowing the real flesh and blood body to be hurt. When Luffy tried haki punching a true fire elemental, it didn't do shit.
