-Use warm water (not boiling- warm from the tap is fine), because it's better for activating the yeast.
-When it says "leave the dough for an hour to rise", if your house is on the cooler side of things, that means *at least* an hour. Even kept near the pre-heating oven, mine still took longer.
-Turn the oven down and give the bread 10 minutes longer at a lower temperature when you reach the end of your cooking time, to make sure the inside is cooked through. I didn't do this first time and it came out doughy and gross.
Otherwise, good luck! Bread is easy, but also easy to fuck up- or at least, it was for me. Baking is like alchemy at the best of times, bread doubly so.
