The changes to and the forced use of the EXP Share support only one kind of playstyle: Constantly rotating out your team.
Gamefreak wants you to catch and use a wide array of Pokemon. Sticking with a static, never-changing team of 5 or 6 isn't the way to go anymore.

I find if you switch out your team while fighting or catching wild pokemon you get put at more reasonable levels. I was still 5+ levels above everyone tho so skip some trainers too

I just caught Pokemon I didn't have for the dex and it was already too much. I even switched out mons when I knew I was gonna catch new shit and it still wasn't enough.

Have you been using Exp candies a lot? I've played through Galar twice now and the only time I had something overleveled was when I used candies or kept one pokemon in front for a long time.

You can't really stop yourself from overlevelling, but there are a few tricks you can try. Personally, I caught Ditto at the Lake of Outrage (you can get there as soon as you get the water bike) and bred my team so they could all restart from level 1. Then I used the original team (the overleveled one) any time I wanted to catch something, so my battling team would avoid the exp.

The really only way to avoid overleveling is don't do raids until post-game and avoid going to IoA's dojo since you'll automatically be given the EXP Charm from Mustard's son in a cut scene.

Just use other Pokemon. There's hundreds of them in the game and lots of new ones to use, plus the game is so easy that you can be severely under-levelled and still have no trouble winning.
Exp. Share being forced is an awful decision but I seriously don't get why you'd still limit yourself to only six mons outside of autistic tradition.

Also limit the amount of time you spend in the Wild Area early on. The bridge that you cross to get the Fire Stone isn't meant to be crossed until after you have several gym badges. The NPC standing near the bridge tells you this. If you can't catch the Pokemon you're battling, then it means you're overleveling. You start out only being able to catch Pokemon up to level 20 until you get your first gym badge and it goes to level 25. They built in this indicator yet people keep grinding too much.
