The ride Pokemon feature in Sun & Moon were a good idea and that idea being expanded to being able to use our own Pokemon would be nice.

G. Rapidash, Garchomp, Scolipede, Suicune, Virizion, Arcanine, Zacian.

For flight Charizard (fuck pokedex height), Corviknight, Nagandel, Noivern.

For water Milotic, Lapras, Primarina, Gyarados

Rhyperior might no be the fastest, but it can carry pretty much all the nessesary for a big camp, while also being a ride for you at the same time.
Can also work as a water ride because Surf, with less materials if you don't want it to be wet.

I don't mind walking on my own two feet when on land, so really I'd just need a mount for air travel. Dragonite seems like it would be comfy. Gyarados for sea travel

Speed is irrelevant, it's comfy as fuck. Bring all your friends, all your gear, customize your environment, travel in your campsite, I mean imagine that just Torterra strolling at night and you're on jts back under a tree inside a sleeping bag dozing off. Best mount.
