IIRC, this was done via a list of item indexes with the specific names scrubbed, but the placement of their names gave hints that inextricably linked to the specific legendries (in a similar method to how we know Dipplin's evo will start with 'Hydra'). The exact details I'm not too privy on, but the point is, chinese dataminers found the exact legendary list.
Today, via the trailer and website, that exact list was confirmed, and the method of encountering the legendaries was shown to be via snacks, specific to each legend, that you buy and "summon" them with, verifying both the hint and chinese leak.
