Whatever surface-level immersion you're able to get out of the game from it isn't worth the number of drawbacks it presents.
First off it lowers the amount of encounters you can have in an area at any given time - realistically you're only gonna be running through an area in Pokemon once per playthrough, meaning that whatever time you go through it and the encounters available then that's what you're gonna get out of that area for your whole run, so wouldn't it be better if all the possible Pokemon were available with no arbitrary time restrictions? That way you can encounter a greater pool of them and aren't risking going three straight routes finding nothing but Zubats because that's basically the only thing the game can think to throw at you at night.
Secondly, in some cases it's actually very possible for it to BREAK your immersion over enhancing it.
The fact that time passes in real time and said passage of time is acknowledged by the characters in the game means that any time it tries to instill a sense of urgency on you that's completely thrown out the window as soon as you turn it off and come back at a totally different time of day - I guess the gang just decided to take a nap in the library after the explosion at Lake Valor, cause between my last play session and this new one it went from morning to night time.
Thirdly, it just looks ugly as fuck - the game simply becomes less visible and throws a murky blue filter over everything that saps all life and identity out of any given area.
If they want night time areas in Pokemon just have an area where it's night time, maybe have the surrounding areas be set at dusk and dawn to sell it a bit better, don't just have the entire game world conform to a singular (way worse) aesthetic for a significant amount of time.
