Okay, so the thing with lakes is that the reason they're full of freshwater is that they have water constantly flowing through them. So there's always at least a river that flows in, and at least one that flows out (you can look at the Great Lakes or Lake Baikal for examples of that).
If you don't have water flowing out of the lake (or at least not a lot), that means the water that flows in leave by evaporating, which concentrates the salt in the lake. So you end up with a lake that is salty. The Black Sea is an example of that. And that's fine and cool, just something you should be aware of, since it wouldn't be a source of fresh water.
Also, yes, misleadingly, rock sugar is actually just refined from plants, it's not actually mined.
