If you ever see speedrunners they often release scripts which is basically their run attempts put into perfect practice. Basically they know the specific hunt mission so well they know exactly where the monster is, where it will run away to, etc, and they just execute their speedrun. The games are designed to simulate hunting, so the devs never want a hp bar to appear. You're better off just learning the game by feel. After a while you are so used to how a monster acts that you just know by your gut if it's dying. You do have to hunt the same monster a lot to get to that point because some monsters like Basarios and Gravios have very high hp pools. It's all about experiencing it, imo. A good way to track your overall progression is to test hunt a punching bag monster whenever your weapon is upgraded, and seem how much faster you clear it, while learning the signs the monster shows when it wants out of the fight.
