2:2:1 glutinous rice flour:water:sugar (make sure it's GLUTINOUS rice flour), you can lower the amount of sugar to adjust the sweetness. There's various recipes for different ratios, you can experiment with it to suit your tastes.
Before you start, choose what you will use as a filling. The traditional filling is read bean paste, scoop it into small balls and freeze it, or put it in the fridge at least so it hardens for easier handling later. I used peanut butter in the same manner before, but also tried baked chestnuts and strawberries as well.
Stir the flour and sugar together, add a portion of the water, mix until smooth, then stir in the remaining water.
If you're using a pan, keep the heat at medium, and constantly stir until it forms a sticky dough
If you make it in the microwave, do so in a covered bowl, it acts as a pseudo steamer that way. you will have to microwave in short bursts, take it out, stir, and put it back in
I felt it was more work than just using a panThe most difficult part is forming the actual mochi...use some corn starch or some of the flour to cover the surface your're working on, and roll the dough in it, it's very sticky and difficult to handle otherwise. Cut it in even pieces. Press the dough flat against your hand, put a piece of filling on it, then wrap the dough around it and pinch it shut. If there's parts left that aren't covered in starch, put some on there to keep it from being sticky on the outside.
I'd suggest looking up videos for it if you're unsure about anything. Also, you really have to make sure you use the right flour for it! I don't live in asia, so it's a bit difficult to come by if I don't look for specialty stories.
