Oxytocin, serotonin, dopamine, epinephrine and others are all synthesized during sexual relations through complex mechanisms heavily dependent on mind state, mood, longer term emotional status, intoxication (inc. drugs), physical activity, bodily stimulation. All those factors have an effect in the proportions and the types of receptors those neurotransmitters can have. I'm pretty sure a molecular processor with sufficient knowledge would be able to differentiate those situations based on the pheromonal output of the participant.
Mind you, it would be plausible for IRL 21st-22nd century tech to artificially create those chemical combinations with sufficient effort, but a disclaimer like that goes for most such things in the setting.
