Location is also an important factor, if a raid happened in a certain location in the past week, that gives you a certain radius where it would be possible to find them. Finally and maybe more importantly, the ship itself can be ID'd as well. Even two ships built from the same plan out of the same dry-dock may be differentiated based on battle damage, the state of the sails, number of canons and such.
Identifying human-derived products would be basically impossible with current tech, so the crew would just have to shut up in those instances. They better hide any bones though, human bones are easy to identify, and deadbeats know their bones.
Obviously you still need to let 'em get close enough to look at all those details, so getting the fuck out is always a solution.
