But the tldr is slice potatoes into fry size, letting them soak in a bowl of water, before draining and putting them in a large stock pot with 2 quarts water 2 tablespoons vinegar 2 tablespoons salt and boiling for 10 minutes before draining them, then frying them lightly in your oil of choice (mine is lard) in small batches, then frying them a second time. Every single time I've made the fries myself I've accidentally burned myself either 1st or 2nd degree and then tell myself I'll never do this again because it's a lot of work and I literally always without fail burn myself with splashing oil, but they taste so good I end up making my own fries again within a month when I've forgotten the pain and the burns have faded
