You can make a fantastic model in no time...that will fall apart the second you look into it too hard or zoom in, but since its a game you can cheat with lighting, effects, angles, shading, etc. Photorealism can be cheated by scanning a person and then re-touching it, and again, it doesnt need to be perfect (unless you are sony and shoving ultra detailed people in every frame)
The models holos use need to look good from every single angle and lighting. They need to point the camera at them, no matter the angle, and the model has to be sparkly clean.
Seriously, instead of pretending you know the first thing about modeling, go and watch a Nijisanji 3D or an Indie. The models might look fine,but the entire point of Holomodels is that they are top of the line. To the top of my head the only Indie with a comparable model is Zentraya and even them have issues with clipping and tracking
