1 onion diced
14oz fresh or canned diced tomatoes (or just eyeball it)
salt/p[epper
16oz chickpeas, drained and rinsed, canned is fine (OR A PROTEIN, such as chicken)
garlic to taste (I use 4 cloves)
1 1/2 tbsp garam masala
1 tsp curry powder
1/4 tsp cumin
13.5oz coconut milk
1 lime
Heat the oil in a deep pan, add onions and tomatoes, salt and pepper to taste, stir together and cook over medium heat until tomatoes naturally release juices and onions soften, ~10 minutes.
Add your protein (chicken needs to be cooked prior, chickpeas are fine straight in), garlic, garam masala, curry powder, cumin .Stir to combine. DO THIS BEFORE THE COCONUT MILK.
Add the coconut milk, stir to combine again. Bring to a boil, then reduce heat to medium-low and simmer for 10-12 minutes.
Taste, add salt and pepper if necessary. Remove from heat. Squeeze both halves of the lime lightly over the top of the curry and stir to combine. Yes, the lime is mandatory.
Serve over rice.
