if you're looking for simcade (more on the arcade side) open-world countryside racing with lots of different car types Forza Horizon (4 or 5, pick based on what location looks cooler to you) is pretty good
if you have a Playstation Gran Turismo goes without saying, it's a simcade that's more on the track sim side and a little more Japanese-centric
if you're looking for other street-racing type games with cops the Midnight Club series (Los Angeles and DUB Edition) is great. NFS Most Wanted 2005 if you can get your hands on it
if you want sim style rally racing there's DiRT Rally and Richard Burns Rally (these are properly challenging though)
if you want sim track racing with full steering wheel and all there's Assetto Corsa, and the Codemasters F1 games for F1 specifically (you can play with gamepad/keyboard but they're best with wheels)
