First, you want a floor plan because it's an excellent tool to visualize just what you are working with, how the store would look like, how the bakery would be set up, how big the cold room is, how many tables the cafe can hold, how it's all set up. Once you have your interior set up, you, and more importantly, everyone else can see what you have.
Then you look outward. You go to the hoomans and say "ey yo I know we talked about being near the border, but I'll need deets. City name, where it's located, how big it is, simple layout, sorrounding lands, what business opportunities it provides, all of that." you get that, you have your playground set up. You have 38 people you can spread over this playground. Some go working in the mines, ain't much but it brings in money. Hey would you look at that, one of the local farmers needs a few extra hands, you got those. The farms output soars because you know what the fuck you're doing. Bam, you got a foothold in the local community and a possible local supplier that isn't just a business partner. The miners will also spread the word about the good food your guys are eating at lunch. Small at first, but you get a steady stream of customers. The mine owner decides to make a contract with you for supplying the lunch. The housewives slowly warm up to you, since the bread is good and they don't have to make it themselves. The Cafe is also very popular with them on the little free time they have. Traveling merchants spread the word about this amazing little bakery on the outskirts that just opened. The right guy hears that and starts seeing coin and profits. Kablamo, you got an investor, and he wants to open a branch in the regional capital. And it's history from there. Tough work, yes, but leagues easier than documenting the entire planet like what was the plan merely a year ago.
You got this, just keep it slow and steady. Make sure to make constant entries so you don't forget about stuff as well. If a thought pops up, write it down.
