You go up and order the tamagoyaki, literally just egg over sushi rice, and if its good then you're in the clear.
I live in bum-fuck nowhere in the USA but the place I go to has good tamagoyaki and they couple that owns the place speak Japanese to each other at the register, so maybe I've had a good sushi place near me the whole time. I've always thought it was fucking good.
