Fresh salmon sashimi or maguro tuna have very smooth and almost milky textures to them, it’s really nice… But bad sushi/sashimi sucks a lot… My personal favorite is unagi/eel though, and those are among the cooked sushi, which there’s quite a few of actually! In Unagi’s case, it’s because the freshwater eels used have a neurotoxin that breaks down when cooked. Unagi sauce is sweet snd delicious too, and the texture is like a less flakey white fish!
