Yeah sure some might be drawn by more high profile artists here and there but it's really not hard to make an appealing design. With the visual aspect taken care of, this allows the streamer to focus on their personality and interaction skills. This especially applies to older hags or maybe girls that aren't as good looking as other ethots.
Now Irys is great and many people have been seeing her charms but that's despite her model, which is an automatic debuff that she has to fight against, same as Flare in the beginning. Also these are otaku girls, they like cute models just as much as the rest of us so it might be slightly disheartening to have to look at that all the time.
