Sure, it has pros and cons, but overall I think it could work. Yes, it is "sci-fi", but more of the digestible "space opera" kind than hard sci-fi technobabble, at its core it's "just" a universal adventure story whose narrative substance works even if you strip away all the sci-fi stylings.
It has loveable characters she would really enjoy, and you could probably bait her with the promise of being able to romance cute alien girls.
The actual shooting mechanics are rather beginner friendly, and can be tuned with easy mode and stop-time command systems to be not a prohibitive skill hurdle.
And also, not unimportant, it's probably easy to get permission for and working, as the remaster came out not too long ago and EA is probably still keen on promoting it.
