Interactive, swift games with a lot happening tend to attract more chatters, and big names like Peko/Gura are notorious for having ridiculously fast chat. Chatting streams often get really high numbers too for chat speed, since they’re interacting directly with the streamer.
So if you want an example of blisteringly fast chat, this one was just mentioned earlier:

At every moment she was active, her chat was through the walls. Another example would be last night’s off collab karaoke:

As far as “slow” goes, typically you see this in chats like flare, watame etc. really chill streams. Here’s an example of this in action:

This is due to the game just being, well, chill and “boring” but this is something you can see often out of some streams where they get relatively high viewership (9k+) with incredibly low chat activity (100 messages a min averages.)
