>guns vs sabersGuns are superior for normal people, but when you have precognition and incredible reflexes, the saber gives you superior defense and the ability to deflect shots back at opponents. The defensive style fits the peacekeeping nature of the Jedi while the need for superior ability fits the arrogant nature of the Sith. Jedi have used guns (Luke still shoots people even after learning how to use a saber), it's just not their preferred method.
