I think people who try it for the first time make one or both of two mistakes:
1. Use too much, like it's a jam or jelly.
2. Really focus in on it's flavor, and think "Do I like this flavor as its own thing?" rather than asking "Does this flavor cooperate well with the rest of the food?"
Issue #2 is easier to have happen when you use too much, but also if you use a tiny bit and act like you're scared of it? Like dabbing a corner of a utensil in and gingerly trying it on its own. Imagine putting too much black pepper on something and really focusing on the pepper itself before saying "I don't like pepper." Sure maybe you don't, but most people use pepper as an accent to the rest of the dish.
