Because if you are literally just your brains and chemical reactions influenced by the environment then you don't really have actual free will - and without free will the concept of sin is meaningless and doesn't work.
The whole point of sin is that humanity came to understand good and evil (after Eve ate the apple) and therefore can choose to be good or bad because they are souls with a higher form of being than mere animals, made in the image of God. The whole point of sin and being punished for it/rewarded for acting against sin is that you CHOSE to do the bad or good thing and you willingly damned or saved yourself. It literally doesn't make sense if humans are just biological robots.
I don't know how you think you can reconcile these two incompatible worldviews.
