In JP, 95% of the time it's CoC 6th edition, with 7th edition being the newer, less popular variant. Occasionally you'll also see Emo-Klore which is just a watered-down CoC.

From holo, Fubuki participates in a session time to time.
From niji, Sango and Sukoya are hopeless trpg addicts.
Vspo doesn't have anyone yet but recently they've been doing Katashiro (thanks k4sen).
Noripro is recently doing Katashiro.
There are many indies actively playing TRPGs which I'll list in a seperate post.

Katashiro is the classic entry point, featuring a linear story mostly about thought experiments. One of the interesting scenarios where vtubers tend to play as themselves.
Any session of Mountains of madness is a decent tale with replays usually being 8-10 hours long.
