HF simply offers an alternate divergent path for the story and for Shirou to take and presents what could happen if Shirou's ideals were truly tested to the limit (the Mind of Steel bad end wouldn't exist if this wasn't the purpose of the route)
the fact that you think the point of HF's ending is 'Shirou matures' and this was the author's intent when writing betrays that you haven't read the VN because, spoiler alert - in the actual default end to to HF Shirou is FUCKING DEAD and Sakura lives alone and miserable
the anime adapted the 'true end' to HF but it's kind of a forced/shoehorned happy ending that is made to work with hamfisted things like Rider still being there and Touko from KnK being cameo-d in as a deus ex machina to save Shirou
It's obvious that the normal ending to HF is what the route was written with in mind
