CK2/3 are stupidly easy to play as well with a ton of downtime.
Total War games like Rome 2, Shogun 2, and Warhammer 2 are good as well.
Mainstream ones include Rimworld, Xcom, Fire Emblem, Disgaea.
There are too many to count and people's expectations are going to vary depending on skill and the type of game being played. I wouldn't want to watch Disgaea, but stuff like Xcom 2 can be stupidly fun to watch
