First reason, which was Nintendo for a good number of years is they saw it as piracy and like people wouldn't need to buy the game. They realized eventually it was fucking stupid and are much more lax about it now(TPC are an exception)
Then there's those that don't want potential players to witness massive spoilers or moments that are meant to be surprises, sometimes these will fall under extra restrictions while still allowing the game to be streamed(Persona and RE4)
There's also additional licensing agreements if the game has extra licensing ala licensed movie games from Disney, Dreamworks, etc.
Then we get to devs that don't want the game streamed because it will expose the game as broken dogshit so they can hopefully trick people into buying it.
To go along with this you also have companies NOT wanting better versions of the game to be streamed as it may not be the most current release OR there may be aspects that mean sales won't give them as big a cut. This is also part of removing older versions from the common conscious as any older versions that may not be fitting with "current global standards."
This roughly covers why alive studios reject streaming of their games.
