If you commit to that though, don't watch Fate Zero until you've read the whole thing else the prequel will spoil some of the bigger impacts in the story.
If you want, go full pleb mode and watch Fate Zero and then the most recent anime, Unlimited Blade Works from 2014. You'll miss out on a lot of the story's deeper context and details this way though. Studio Deen's adaptations aren't very good. Skip them.
