I'm skinny fat and hate the way my body looks. Ideally I'd like to look normal like pic related instead of like a sack of potatoes.

I've tried to fix this in the past with weightlifting and calisthenics but I quickly lose motivation because I'm strictly vanity motivated and if I don't see physical progress I give up quickly.

I've had similar issues with diet, because I lose my shit over counting calories/macros and not being able to have complete control of what's available to me at all times. Multiple people have told me they think I have an eating disorder because of this.

I need a diet/exercise routine that will get me to my goal of looking normal while also allowing wiggle room for life/sickness.
